Cloud Nine Coconut Energy Bites Recipe

I love a simple recipe for a nourishing snack and this is one I’ve perfected over the past few years. They take less than five minutes to make and they taste absolutely heavenly!

The perfect boost of energy for that mid-afternoon slump with good-for-you ingredients and a great, nutritious snack to power you through your to-do list! If you have children, they’ll love them too so get prepared to make them all the time!

Ingredients:

  • 10 Medjool Dates, stones removed

  • 100g Desiccated Coconut

  • 30g Raw Cacao Powder (or cocoa powder if you prefer)

  • 2tbsp Almond Butter (or your choice of nut butter)

  • 2tbsp Coconut Oil

  • 1tsp Vanilla Essence

Method:

Pop everything into a food processor and blend until everything is well combined. Divide the mixture into about 12 and use your hands to form them into tightly packed balls. Put them in the fridge for a couple of hours to firm up and then - enjoy!
